Mauro Colagreco, the most Riviera-rooted Argentine chef and the three-star maestro of Menton, continues to broaden his culinary universe. His latest venture takes shape on the Côte d’Azur with the opening of Amarines, a new gastronomic restaurant nestled within Villa Mirae in Cap d’Antibes. Though “outside the walls” of his flagship Mirazur, the project is anything but distant for the chef: he is personally involved, greeting guests alongside his wife Julia the very day after the hotel’s festive opening.



Villa Mirae: A Radiant Transformation
Formerly known as Impérial Garoupe, the hotel has undergone a stunning transformation under the vision of architect Oscar Lucien Ono (Maison Numéro 20). The design harmoniously blends the golden hues of sunlight, the deep blues of the Mediterranean, and the poetic greenery of the surrounding gardens.
Burgundy stone, carved wood, natural linen, and Murano glass set the tone, elevated by elegant frescoes and mosaics. From the entrance gallery to the dining room, the entire space exudes serenity—a refined tribute to the art of living and dreaming.
Amarines: A Mediterranean Journey
At Amarines by Mauro Colagreco, the menu celebrates the Mediterranean, local terroir, and a profound reconnection with nature. The culinary philosophy prioritizes sustainable agriculture, responsible fishing, and short supply chains.
The restaurant welcomes around fifty guests and features a charming terrace, offering a gateway to Colagreco’s universe with a more accessible approach than his acclaimed Mirazur.
On the Plate: Elegance, Freshness & Precision
The experience begins with a house cocktail made with gin and rose—fresh, delicate, and perfectly balanced—paired with local amuse-bouches such as barbajuan and pissaladière-style pichade.
Then comes a Mediterranean icon: gambero rosso. Having dedicated an entire book to this exquisite San Remo red prawn, Colagreco presents it as a carpaccio with citrus and basil oil—a dish that hits all the right notes: pure, vibrant, and deeply evocative of the sea.
The second starter is equally impressive: pea ravioli with preserved lemon, lifted by savory mountain savory and cloaked in a lush aged Parmigiano Reggiano cream. Refined yet indulgent.
For the main course, the Sisteron lamb arrives in a springtime navarin, tender and full of character. The secret? A house-made hazelnut and herb gomasio that elevates the dish with irresistible aromatic intensity.
Wine pairings curated by the sommelier prove spot-on, especially the 2021 Langhe Nebbiolo, both deep and silky.
Dessert brings a contemporary take on chocolate comfort: rice pudding with cardamom gel, Genmaicha cream, and cacao ice cream. A balanced and memorable finale.
