Neo-Art Deco Meets Modern Chic
Delano takes its name from the middle name of the 32nd U.S. president, whose portrait is proudly displayed in the bar. Architect Laurent Maugust reimagined this 1930s building in the Carré d’Or, blending Art Deco elegance with modern touches, particularly in the lighting. The result is a striking green-and-gold interior, setting the perfect stage for Paco’s cocktails.
Paco’s Masterful Mixology
Behind the curved, mirrored bar, Paco (formerly of Old Sport Club and Merkado) shakes cocktails day and night. His creations are playful, inventive, and impeccably balanced. Standout drinks include:
- Clean Porn – a decadent twist on the Porn Star cocktail, with passion fruit, tonka, buttermilk, vanilla, vodka, Tio Pepe, and prosecco
- Key Largo – peach, black sesame, gin, and amontillado
- Pomelo is the New Vibe – caramelized white chocolate, grapefruit, green cardamom, mint, honey, tequila, and mezcal
- French Fashioned – a sophisticated mix of vanilla, pear, Calvados, rum, and Cognac
Non-alcoholic options are equally inventive, featuring roasted coconut, banana syrup, and fresh lime. Paco’s dedication to quality spirits and unusual ingredients—like Salvadoran Ron Colon combining rum and whisky—creates cocktails that surprise and delight.
“I think about flavors and combinations, testing them first in the kitchen,” Paco explains.
At Delano, the connection between plate and glass is seamless.
Japanese-Style Bites to Match the Cocktails
The food menu is light, elegant, and perfectly aligned with the drinks. Start with crunchy fried corn, then sample gyozas with shrimp, perfectly rolled maki, or Dragon rolls. Most dishes come from the nearby Vogue d’Asie, delivering Japanese classics executed to perfection.
The Ambiance and Extra Touches
Delano’s charm lies in its chic yet relaxed vibe—the kind of place that invites you to return night after night. Regular “Guest” evenings bring in some of France’s top bartenders, adding an extra layer of excitement for cocktail lovers.
With its stylish décor, innovative cocktails, and Japanese-inspired bites, Delano is more than a bar—it’s a celebration of mixology, creativity, and the art of enjoying a night out in Nice.
