Le Canon is a true bistro-canteen, with no fixed menu—just a daily-changing chalkboard inspired by seasonal finds and the market.
“The menu changes twice a day depending on what’s available. The product sets the rules, and Elmahdi, the kitchen magician, brings it to life,” explains Sébastien.
At lunch, expect pork rillettes from Saint-Cézaire, Aubrac beef tartare with crispy fries, delicate mackerel from Gros de Cagnes with wholegrain risotto, or desserts like fiadone with local lemon and unforgettable Vence grapefruit tart. Every ingredient is sourced locally, crafted with care, and served with an eye for balance and flavor.
Evening: Elevated Bistro Cuisine
Dinner at Le Canon highlights both land and sea, with Mediterranean fish from Steve Molinari, mountain-raised meats—Utelle poultry, Bendejun pigeons, Grasse black pigs, Courmettes lamb—and even offal, often overlooked elsewhere.
