A Family Story Rooted in Nice
Well known across the Riviera, the Paloma Group now operates eight establishments, each with its own distinct identity—from the iconic Paloma Beach to the more recent Foam craft beer bar. Yet among them all, Le Virginie holds a very special place in the Vannini family’s history.
The story began in 1948, when a grandfather of Italian origin—then a coal merchant and regular at the former Brasserie Le Terminus—fell in love with a young waitress. He bought the business, renamed it Le Virginie, and passed it on to his son, Jean-Claude. Nearly 70 years later, the torch is now carried by the third generation: Baptiste, his wife Mariana, and his younger sister Agathe.
Tradition Meets a New Generation
While the neighborhood has evolved considerably, the soul of Le Virginie remains intact. The guiding thread is still popular Italian cuisine, worthy of the best osterie: antipasti, fresh pasta, pizzas, grilled meats, and generous tiramisu.
At the same time, the menu has been broadened to reflect today’s diverse clientele. Vegetarian salads and gourmet burgers, made with freshly baked buns created especially for the restaurant, appeal to students from the nearby medical school and journalism campus. Fish dishes, aioli, and moules marinières reassure loyal retirees for whom Le Virginie remains a cherished meeting place and social hub.
A Fresh Look Without Losing Its Soul
Updating a local institution is no small challenge. Le Virginie has succeeded by adding pop colors to its rustic furniture, creating a lively yet familiar atmosphere. A dedicated cocktail and aperitivo area now invites guests to linger, especially on Thursday evenings, when live music is paired with complimentary antipasti served alongside cocktails.
This careful rejuvenation has breathed new life into the brasserie—without betraying its identity.
