A Duo with Deep Culinary Roots
Founded in 2014 by Gauvain Torregrossa and Cyrille Billa, Les Sens is the result of a long-standing professional friendship. When Christian Plumail’s restaurant L’Univers closed, Cyrille took the lead in the kitchen, bringing with him experience from prestigious establishments such as La Chèvre d’Or (Èze), Le Martinez (Cannes), and London kitchens.
Today, Cyrille heads a brigade that includes his wife as pastry chef, ensuring a 100% homemade philosophy—from sauces to bread and even ice cream.
